久しぶりにチョコマフィンが食べたくなったので、色々とレシピを
いじっていました。
生クリームとオイルで焼いてみたんですが、濃厚さに欠けたので
今度は生クリームと溶かしバターで、ココアも少し多めに加えて
焼いてみたところ、すごく美味しくできたので、シェアします。
この実験により、日ごろのオートミールの成果は消滅したものと
思われます、、、笑

【Ingredients】Make 6 Muffins(Caliber 6cm ,Bottom diameter 4.8cm
Height 4cm)
1 Egg(55g) room temperature
60g granulated sugar
35g Melted butter(Unsalted butter)
100g Heavy Whipping cream (35% fat)
★100g Cake flour
★35g Cocoa powder
★3g Baking powder
For Toppings: 50g Dark chocolate
Fold the chocolate by hand.
【Directions】
①Add granulated sugar to the egg .
②Pour the melted butter( little by little in it while stirring. Make it smooth. (Emulsify it.)
③Add the heavy whipping cream and stir.
④Sift the dry ingredients (★) over it.
⑤Mix well until combined.
preheat the oven to 170℃(338 °F)
⑥Transfer the batter to a piping bag.
Pipe the batter into each cup.
(or put the batter with a spoon in each cup. )
⑦Top with dark chocolate.
Push them in lightly.
⑧Bake at 170℃(338°F)for 16 minutes.
It's all done!
*When the heat went away, put it in a plastic bag or wrap it.

【材料】マフイン6個分
卵(M~Lサイズ位 殻無しで55g)室温
グラニュー糖 60g
溶かしバター(無塩) 35g
生クリーム 100g (脂肪分 35%)
★薄力粉 100g
★ココアパウダー 35g
★ベーキングパウダー 3g
For Toppings:ビターチョコレート 50g
チョコは手で折っておく。
【作り方】
①ボウルに卵を割り入れグラニュー糖を加える。
②溶かしバターを少しずつ加えながら混ぜる(乳化させる)
③生クリームを加えて混ぜる。
④材料(★)をふるって加える。
⑤ゴムベラで混ぜ合わせる。
オーブンを170℃に予熱する。
⑥絞り袋に生地をうつし、カップに均等に絞り入れる。
(絞った方が綺麗に入るので、絞り袋が無ければビニール袋に
入れてやってみてください。スプーンですくって入れてもok)
⑦チョコを上に乗せる。膨らんだ時に落ちないように、少し
押し込むように乗せると良い。
⑧170℃に温まったオーブンで16分焼いて出来上がり!
●焼き方と保存
*焼き過ぎると生地がパサつきますので焼き過ぎないようにしてください。冷めたら乾燥させないようビニール袋などに入れましょう。
●マフィンカップのサイズ
口径が6cm,底が4.8cm,高さが4cmです。
100均のマフィンカップですとMサイズくらいなのかなと思いますが、あまり大きな型に入れてしまうと個数が取れずにボリュームも出ませんので、むしろ小さ目サイズで焼いても良いと思います。
その場合、火の通りが早いので、少し焼き時間を短くするなど、調整してください。
●お砂糖の役割
甘みをつけるだけでなく、気泡を安定させ生地を膨らませてくれたりまた水分を保つ役割もあるので、しっとりとした焼き上がりになります。
お砂糖を減らすと生地があまり膨らまず焼き上がりが固くなってしまうこともありますのでご注意ください。
●生クリームは牛乳には置き換えないでください。
脂肪分が35%のものがないときは、植物性ホイップクリームでもokです。
●アーモンドプードル入りで作りたいときは、100gの薄力粉のうち20-30gをアーモンドプードルに置き換えてください。

Công thức Chocolate Truffles mình tham khảo từ Jean-Paul Hévin đầu bếp chocolate người Pháp với chuỗi cửa hàng chocolate cao cấp ở nhiều nước.
CHOCOLATE TRUFFLES
Cho khoảng 20 viên:
27g bơ nhạt động vật (2 tbsp unsalted butter)
200g chocolate đen ít nhất 65-75% cacao (dark chocolate 65-75%)
150g kem tươi ít nhất 30-35% béo (whipping cream 30-35% fat)
Áo: bột cacao, bột trà xanh, dừa vụn, hạt, kẹo đường… (cocoa powder, matcha powder, desiccated coconut, nuts, sprinkles, etc.)
Có thể thêm hương vị, ví dụ như tinh chất vani, rượu, tinh chất cam,...
MATCHA TRUFFLES
Cho khoảng 18 viên:
200g chocolate trắng (white chocolate)
75g kem tươi ít nhất 30-35% béo (whipping cream 30-35% fat)
6g bột trà xanh (1 tbsp matcha powder)
Áo: bột trà xanh, dừa vụn, hạt, kẹo đường… (matcha powder, desiccated coconut, nuts, sprinkles, etc.)
TRUFFLES CACAO/BRIGADEIRO
Cho khoảng 9-10 viên:
20g bơ nhạt động vật (1.5 tbsp unsalted butter)
100g sữa đặc có đường (sweetened condensed milk)
40g bột cacao nguyên chất ( cocoa powder)
Áo: bột cacao, bột trà xanh, dừa vụn, hạt, kẹo đường… (cocoa powder, matcha powder, desiccated coconut, nuts, sprinkles, etc.)
TRUFFLES DỪA/COCONUT TRUFFLES
Cho khoảng 14 viên:
20g bơ nhạt động vật (1.5 tbsp unsalted butter)
100g sữa đặc có đường (sweetened condensed milk)
100g bột kem dừa (instant coconut cream powder)
Áo: bột trà xanh, dừa vụn, hạt, kẹo đường… (matcha powder, desiccated coconut, nuts, sprinkles, etc.)
OREO TRUFFLES
Cho khoảng 20 viên:
14 bánh Oreo 154g (Oreo cookies)
60-80g cream cheese
Áo: 100g chocolate trắng + 10g dầu dừa hoặc bánh quy vụn (100g white chocolate + 10g coconut oil or crushed cookies)
CHOCOLATE PHỦ/CHOCOLATE COATING/
100g chocolate đen (dark chocolate) + 10g dầu dừa (coconut oil)
100g chocolate trắng (white chocolate) + 5g dầu dừa (coconut oil)
